Passover Coffee Cupcake Muffins

Very small, expensive for what it is, Enjoyed taste. Could have been fresher.Was somewhat dry, but enjoyed it with coffee.

The shipment arrived and was delivered on time, however it would be nice to be notified when the package was shipped, so I - who placed the order - would be able to truck the shipment myself.
The package I ordered for my neighbor who is over 90 years old and tankful to her daughter who was just here to pick up the package, otherwise it would be by the door exposed to weather conditions for days,
My plan was to truck and watch for the shipment and even call the recipient and make her aware of package.
In this case I needed to ask for update on shipment and the information sent to me was few days after the shipment arrived. Little more imagination would be nice as not always the young and healthy ones are the one receiving the shipment. Otherwise I was told that she liked the cookies.

These cupcake muffins were light and delicate. Definitely, not too sweet, just right.
